I'm trying to cut way down on my simple carbs and want to really focus on the more complex carbs. I would like to know what the best complex carbs are to eat and also which ones are easy for on the go?

Hi, low gi are better, but you still need to mix it up a bit. Just look around online for lists, and find what works for you. Cheers

I read in quite a few places that its best to eat carbs mostly from veg that grow above ground...... rather than startchy root vegetables.

Think "brown" ... Brown rice, 100% whole wheat bread instead of white, etc. Whole grains. Start to wean yourself off the white stuff.

The best of the best in my opinion is quinoa- an ancient super seed although people consider it to be a grain haha. But honestly, variety is key! I mean no one would want to eat the same things over and over again, even if it tastes good. So here are the other healthy complex carbs I keep in hand: oats (steel-cut preferably but old-fashined rolled ones are good too! and stay away from the flavored ones please-- they are loaded with added sugar), farro, amaranth (very similar to quinoa), brown, red, black, or wild rice, beans and lentils, and sweet potatoes!
--Also, if you are following a vegan/vegetarian diet, please mix your legumes with your grains. This is because plant proteins (besides soy) are not complete. This means that they need to "compliment" each other in order to fulfill all of the 9 essential amino acids that our body needs! Hope this helps and goodluck! 🙂
