comfort food makeover suggestions

Hey everyone, in responding to another post, I was wondering if anyone had good suggestions for comfort food makeovers...

 

It's cold and snowy in the northeast today, so its on the brain!

 

One way I get my comfort without calories is I steam spinach, then add marinara sauce and vegetarian meatballs or vegetarian sausage - it feels really indulgent but isn't too bad (esp compared to pasta!)

 

anyone else have some go-tos they use?

My favorite comfort food is turkey and zucchini stew. Super easy to make in large quantities (it will last a few meals).
1 pound of ground turkey

4 large tomatoes (or a can of stewed tomatoes)

1 large bell pepper

6 to 8 medium zucchini

1 large onion

1 cup of low salt veggie or chicken broth (or 1 cup of water)

Sweat the minced onion in a bit of olive oil until transparent, add the turkey and brown it a bit. Add the cubed tomatoes and bell pepper; add the sliced zucchinis (don't slice them too thin). Add the broth, salt and pepper to taste, cover and let it cook for 40 minutes or so. You can add a few chili flakes for spiciness.

It's full of flavor and great for cold days.

My saviour has been the Hungry Girl Cookbooks. I got this one giant cookbook from Hungry Girl and it has been such an inspiration for so many of my go-to comfort foods. Even if you don't follow the recipes exactly it will really help you to start looking at cooking healthier and getting creative with your meal choices! It's worth every penny I promise.
