healthy TGI Friday Potato Skins

I love eating TGI Friday Potato Skins, but that would either blow my calorie budget, or I'd have to work my brains out to get enough of a deficit in my calorie wallet that I'd be too tired to enjoy them.

 

Is there a way to make them, healthily, and be able to enjoy them too? I have have canned potatoes in quart jars that I have in my basement that I can use. It's just a matter of figuring out the rest.
