why does roast beef come us as 30% carbs??

try it:

in your find entries for the day, add just one item: 

boar's head roast beef.  you will see that your protein, fat, and carbs are roughy 1/3,1/3,1/3.

my understanding was that there were very few carbs in meat.

anyone know what might be going on with this?

Because it is processed meat?   

Ingredients: Beef, Water, Less than 1.5% of Salt, Sodium Phosphate, Flavor, Tapioca Dextrin, Dextrose, Maltodextrin,Beef Broth, Natural Flavors.

But how could they possibly get it to be 30% carbs?? It doesn’t seem
right.
I could imagine some for sure. Looking online, the nutrition guide says it
should be 2%.
Seems like it’s just bad data in the tracker.

I think it's related to the fact that that it's prepared differently. I mean yeah, it’s meat after all, but with beef, almost everything is based on how it’s prepared. When in doubt, go to the website for the food in question.  I had to do the same thing for the Oroweat low carb bread.  It has 3 net grams of carbs, but was listed in the tracker as 11 grams.  I added it to the tracker with the net carb count and use that one.

 

In the matter of the roast beef, per the Boars head website, it has 0 carbs per 2 oz serving.
