The tracker is registering activities I didn't and can't do. How do I stop it from incorrectly identifying activity and how do I enter unrecognized activities that I have completed?

Thanks for sharing that your Inspire 3 has been recognizing your activities incorrectly. As you may know, your tracker uses SmartTrack to recognize your activities based on the continuous movement of your arms and the intensity. Sometimes your tracker might incorrectly detect your activities, mostly if your exercise has a similar movement pattern in comparison with another exercise type.
That said, you can always change how your activity is labeled in your exercise history:
To turn off 'SmartTrack': Open the Fitbit app > tap on your profile picture > choose Activity and Wellness > Exercise > Choose the exercise and turn it off.
Please note that 20+ exercises are available in the Exercise app. You can choose the option that best matches your activity (for example, if you attend a spin class, you can use Spinning). If your exercise isn’t included, choose Workout. For more information see Which workouts can I track in the Exercise app on my Fitbit device?

I think you have to mange things from the app. Whatever you want to display you can mange it. Some activities we have to chose manually when we are doing that.
