Is there a way to set Fitbit to display my heart rate in the larger digits in real time when I work out, and stay on that setting? I only need Fitbit to do this one thing..

Thank you for letting us know that you want to see your heart rate in real time during your exercises.
If you want to see your stats during the workouts it is necessary to change the tracker settings to "always on display", keep in mind this setting drains the battery and it is recommended to turn it off once you finish your workout.
To change the settings follow the steps below:
Additionally I suggest you to always verify if your phone, app and tracker are up to date.
