Is there a way I can get the inspire 3 to check my oxygen levels all day and update?

Hello @MartinIsEpic and welcome to the Community.  I'm sorry, but no.  The SpO2 sensor is only active during sleep.  This is true for every Fitbit model.

As our friend LZeeW mentioned, SPO2 will be only recorded during the sleep .
