The only substantial improvement I see over the 2 is the SP02 monitor and I guess the watch pay features? Is there anything else I’m missing? (I consider the color display a downgrade lol)

Why consider color display a downgrade?  I expect it would increase visibility, often considered a weakness of the b + w display.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.

@pekhaqun as far as I know there's no Fitbit Pay.

While it is nice to have a color display, the weak point of the current line is that the design of each and every screen screams "look this display has colors". For the users who'd like their device's interface to be optimized for actual use rather than as a Fitbit advertisement less would be more. Hopefully the clock faces will mature over time.

I'm still deciding on whether to buy this as a replacement for my Flex 2. Can the colour display be turned off or set to timeout?

The display can be set to timeout.Virtually all screens have bright colors of quite random choice.

Yikes, the clockfaces are awful. So yes, hopefully we'll get some new ones. It is, as @fnrhrfjfjrj says, an advertisement for the color screen... nothing more (and quite a lot less).
