Inspire 3 isn't tracking my sleep times accurately

I have my sleep schedule set on the app from 21:00 to 05:00.  However, when I look at my sleep tracking it often shows my sleeping starting much earlier (19:00).   This does not appear to be a time zone problem.  I am not falling asleep early, so confused why my Fitbit thinks I am sleeping, when I am still awake.

Which kind of activities/routines are doing before 21:00? When your body is completely at rest and you haven’t moved for about an hour, your device records that you’re asleep.

Thanks.

I am usually watching TV around those times, but I am not completely at rest.  Will see if flicking my arm (at least to make the time appear) is enough to keep it from seeing me as a sleep, when I am awake.
