I commute by walking and biking. I've had Fitbit devices for many years and they have always silently recorded my commutes - very nice!
Since a recent update about a month ago, my Fitbit starts workouts modes when it detects my walking or biking. This hides the normal display (so the clock face gets minuscule and I can't see my total steps). I honestly DGAF about my "pace" while running errands! I just want to see my overall stats and a big clock!
It also bumps off my "recent" workouts so every day I need to go through the whole list of workout types to find either Strength or Spinning, which have been bumped off the most recent list by the auto-added Walk and Cycle. 😭
Any tips or workarounds welcome.

Hello @cecing and welcome to the Community. The recent firmware update added a new feature to the Inspire 3. It is an Auto Start feature in the Exercise app that is in six shortcuts: walk, run, bike, elliptical, rowing, and spinning. This is different from the SmartTrack feature you used for years. You must turn it off in each shortcut. Here's how to turn it off:
You definitely want to do this in the Bike shortcut, too. This same feature got added to the Sense 2, the model I use. I turned it off in all six shortcuts.
