I love my Inspire 3 and I love the detailed sleep data. However, I go to bed every night and read for as long as I can keep my eyes open. Since I am still, the fitbit starts counting that reading time as sleep time -- but logs it as awake. I really want to disaggregate my waking times during the night from my reading times. Is there a way to initiate "sleep is starting now" on the fitbit or in the app?

No, you can't start sleep tracking manually. But in order to get more realistic sleep tracking, I'd suggest setting up a sleep schedule and a sleep goal. You might also change the Sleep Sensitivity setting on your device to better match your sleep habits as mentioned in the help article linked above.
