This is a recent problem. I’ve had my Inspire 3 for months. When I got it I was able to specify my exercise shortcuts on the app, sync it and presto.
But a few weeks ago it somehow changed my menu and I can’t change it back. Things I have tried:
Changing shortcuts in the app, then sync.
Changing shortcuts on the web portal, then sync.
Adding or subtracting shortcuts in either app or web portal, then sync.
Restarting watch.

Yea welcome to the new update!
Wait until it starts hassling you by vibrating asking you to press start on an auto-tracked walk (or any recognised exercise) every time you move and then you can't even go back to the regular clock face without pressing start, stop, end, done etc. This new update is just terrible.
I have had to manually turn off auto-start exercise under each one on the watch (the setting in the app does nothing to stop this), but now I don't get any auto tracked walks like I used to silently. Google are trying really hard to screw up Fitbit.

The new update changes it to list the recently used exercises, which is so stupid and defeats the purpose of setting those shortcuts. You'll just need to go to the list of FORTY exercises and pick the ones you want by starting an exercise for each one. And be careful not to pick something different by accident since it'll bump it to the top.

Same. I've migrated from an old Charge tracker to the Inspire 3. Looks like I can only get 3 of the most recent exercise shortcuts in my queue. And until I was able to turn off the new Auto Start settings, that queue was disrupted by random exercises I never performed.

This new update is terrible!! I usually run or bike and those are the shortcuts that I use. I went to run and the only choice on my watch was a walk. Standing out on the street, I'm trying to scroll through to find something and it's all about the stupid walk, then I click MORE and I get the choice of 40 activities that I have to scroll through. I decided, after much swearing, to just use the walk timer and hope that it would auto recognize that this was a run. Nope. Just ended up listing it as a walk. Then I went to my phone to check my exercise shortcuts and they're all still the same, Run, Bike, Swim, but on my watch it won't recognize that. This is ridiculous. They better fix it.
