Can I get notifications from 2 phones on my Ionic? I have a work phone and a personal phone and woul like to get notifications from both on my watch.

Very unlikely. Notifications require to keep BT connection established between the phone and Ionic. Ionic may be connected only to one mobile device at time and may sync and receive notifications only from that device.

Welcome on board @Kevsinnon, it's nice to see a new member around! As my friend @SunsetRunner mentioned, if you use more than one device to sync, make sure the other device isn't nearby. If the device is nearby, turn off Bluetooth on it.
In addition, keep in mind that if your phone is managing multiple Bluetooth connections simultaneously:
These interruptions are typically caused by operating system and Bluetooth limitations. It's also possible that an app on your phone is causing the issue.
If you have an Android phone, try these steps:
The API used in these apps makes it difficult for Fitbit to communicate reliably with your phone. Ford provides a list of apps but note that other companies may use the API as well.
