Similar to many other issues, notifications are no longer working for me. They were working until about a week ago, when they stopped syncing. Now I can't even go to the notifications settings in the app. I've tried removing/re-adding the device, etc., but no luck. No matter what I do I can't get notifications, the app doesn't even seem to recognize it has notification permissions.

I have same experience, I restart my phone and works again

I cant see that phone on the Compatible Devices List HERE so that is probably why you cant get notifications to work. I know you say they worked in the past but maybe notifications are not consistant with that phone. Hard to say as it isnt on the list (as far as I can see)

I had problems connecting to my Pixel XL 2 when the Ionic arrived replacing an Alta HR. Went to Google and was advised to reset the phone (Settings;System;Reset options;Reset Wi-FI, mobile & Bluetooth).
Effected reset and Ionic connected. Went to bed turning phone off as usual. In the morning same connectivity issue, so had to do another reset and now have to re-pair all other bluetooth devices. Apparently one can leave the phone on all the time, so hope to avoid this issue in the future.
