So, for the last month or so i haven't been able to sync my Ionic on Android...so today I've removed it from the app, uninstalled and reinstalled the app, restarted my bluetooth and now I can't add my Ionic as my phone can't find it!!!
Someone help!

You probably will not be able to add the tracker until the sync problem has been fixes. Simply telling Fitbit, I don't want to use the tracker will not fix a comunicaticom problem,
Since you say that you have an Android device let's,
Remove the Ionic from your Phones Bluetooth list of trusted devices.
Restart the ionic
Restart the phone
Clear the cache for the Fitbit's app.
Phone settings / Apps / Fitbit / Clear Cache
