Just recently changed from a Samsung to iPhone. My notifications were perfect on Samsung .. now on iPhone I try to turn notifications on for calls/calendar/email and it’s just spins won’t let me set up the Bluetooth .. any ideas.. so annoying

Have you tried a reset on the Ionic? Just hold down the bottom right and left buttons for about 10 seconds, the Ionic will shut off and then show you the Fitbit logo...congrats, you have successfully restarted your Ionic! You may want to try that at least 3 times, as sometimes the first time doesn't take.
Others have found that unpairing and repairing the device with your phone works. I've tried that with little or no success, but it may be worth a shot.
Still, others have had luck uninstalling and reinstalling the app. I've had no luck with this approach either on the Ionic, but it worked with my Alta HR.
When all else fails, you may want to try syncing to a different device, i.e a computer. This is the only way that I can get my Ionic to sync at the moment. Others have suggested removing all other Fitbit devices from my phone and account and just having the Ionic, but since I have more than one Fitbit device and switch during the day, it's more convenient for me to just switch the device that I sync to, rather than going through the setup process for each Fitbit device.

Mine is doing the same thing except I went to iphone 6 to iphone x and it doesn't show notifications and it doesn't show up when I go to pair using bluetooth.

Never mind! I just figured it out. I had to go to the app, click on the image of the fitbit, click "notifications", and then it asks to "pair". It works now.
