I have an Ionic
I tried doing a reset from the watch... under settings then 'About'
I tried the 3 buttons sequence.
I tried the 3 buttons sequence after doing a shutdown (from settings and once again using buttons).
I did all of the above with watch removed from Fitbit app and unpaired from bluetooth and bluetooth switched off.
ALL OF THE ABOVE didnt work to reset my watch!!
Any suggestions or help?

According to this help file - https://help.fitbit.com/articles/en_US/Help_article/2216/ - your first step (in Settings / About) was the right one. What happens when you try it?
Out of interest, why are you trying to do a factory reset? Are you trying to fix another issue? Just wondering if there is another issue then that may be causing the reset issue.

When I follow the steps, either from the watch menu or by pressing the 3 buttons and releasing in the correct order and time, the watch restarts and data is not wiped (neither steps, calories...etc nor the apps are deleted)
Yeah I'm doing a factory reset cause my watch stopped syncing correctly and I was advised by the customer service to do the reset.

Factory reset is designed to remove the tracker from your account, reset the pin code, and disable Fitbit pay.
It should not remove steps, etc since these are not personal data.

what about 3rd party apps? And clock faces? Should those remain as is too?

When I did a factory reset, mine did remain. But that was before the last update.
