Going on a cruise and phone will be off for 7 days. Will my iconic keep all my data that long? I can charge it, just won't be able to sync it. Or can it sync in airplane mode, no wifi either?

Yes, all your data will be stored for that period and will be transferred to Fitbit when you get home and make a sync.  Relax and enjoy the cruise.
