On a Fitbit help page (what has changed in the latest Fitbit update) it says the Ionic is on Fitbit os 27.something while the Versa is on 3.something. Is this just Fitbit not updating their website or is the Ionic no longer being updated?

The Ionic is still being updated. The versioning for Ionic starts with 27 the Versa starts with 32. Usually versions get referred to as the numbers after the 27/32 (33.1.30) which should be consistent on the two devices.

Those are the updated versions you should see. Check this article for more details on the versions. If you see the number for a previous version; please try these update steps to sort this out.
