I have just got a new Google Pixel 5 5g phone and I cannot pair my Ionic with the App. Rebooted phone, watch, reinstalled the Fitbit App, turned Bluetooth on and off. Ionic is plugged in and charging, no other devices are paired to the Ionic. Stuck in a loop not sure what to do next. It was working fine with the Pixel 4.

I appreciate that you mentioned the phone model that you have, thanks for the troubleshooting tried prior to posting.
I'd like you to try the whole troubleshooting posted in this article, even though you already tried some of the steps mentioned there, it's recommended to follow the procedure as described there.
Also you may want to check the list of devices that have been fully tested by Fitbit here.
