So my ionic hasn't tracked any data since early yesterday evening. I plugged it in for its "calibration" and have restarted it and still nothing tracks.

I think you will need to email support and get them to look into your account and replace the watch if they cannot advise you how to fix it.
edited - sorry i re read that you had rebooted already
