Can somebody tell me how to start off this exercise on the Ionic?

You will first need to go into the fitbit app on your phone.
Within the app select account and then select the Ionic. Scroll down to where it says exercise shortcuts and tap on that. Swipe left on any of the shortcuts (Android) to remove it. You should then see a + in the top right hand corner, press that and you should now be able to scroll down and add Spinning to the Ionic.

Poor UI here then. It isn't immediately obvious you have to delete an exercise because there is a limitation of 8, and why have this limitation anyway?

No problem, I've just been in the Fitbit fold long enough to work out the quirks. I agree though, some things are not very obvious.
