Pretty frustrating that you can wave your arms around in the kitchen and clock up steps but they don’t count when swimming hard for 30 mins. Any chance this will be addressed as part of the fun of FitBit is the weekend warrior and workweek challenge, I brought an Ionic assuming this would include my swims in the challenge

Fitbit only counts step-based activities in challenges, and they don't consider swimming to be step based. I have the same problem with spinning-- lots of activity, no steps. Changing this has been proposed, and you can vote for it here.
As far as active minutes, the Ionic will disabled HR tracking during swim mode, so those don't get counted. If you don't use swim in the Exercise app, but let the Ionic auto-detect swimming, I believe it will keep the HR monitoring on and you should see active minutes that way.
