It seems it's a long standing issue.
Can we expect to have reliable volume control from Ionic on paired Airpods Pro?
Airpods Pro volume is controled by Android and other non Apple products. It should work with Ionic.

Currently Fitbit Ionic won't control the volume on Apple Airpods. If you would like to see this implemented, you may want to vote and comment on this idea: Make versa volume controls work for AirPods. Even though the idea is for Versa, once implemented it should work for Ionic too.
