Apologies that I don't have a solution but I do have the same problem. Bought the wife and myself Ionics to replaced a Gear Fit and Band 2.
My device went through setup etc no problem whatsoever. The wife's on the other than has been a monumental pain and so far I haven't managed to work out the problem.
Have tried numerous resets, uninstalls and reinstalls etc under Windows 10.
The next thing I will try on the wife's is using the fitbit app on her mobile (Samsung A5)

A belated Merry Christmas to you, as well.
I'm assuming you're trying to transfer music to Ionic, as that's the only reason to use Wi-Fi.
Have you set up your Wi-Fi network through the app? If so, go to the Wi-Fi settings and press the network you want to use. You have to manually turn it on for Ionic to connect to it.

No answers here either. My hubby bought me Ionic for Christmas. I cannot set up, pair, connect to wifi, or even see the device under Bluetooth. I have deleted previous fitbit device from my account. I deleted and reinstalled the fitbit windows 10 software on my pc. I've restarted my pc. I've turned off my phone. My husbands devices Bluetooth also does not recognize the new ionic. After hours of trying to get this to work, I give up.

I believe that when setting up WiFi through your phone it must be on the same WiFi network as the one you’re trying to connect your Fitbit with. In other words don’t have the phone on a 5.0 network while trying to connect the phone on a 2.4 network. It seemed to have solved my issue once I changed the WiFi network that the phone was using. Good luck.

Update to previous posting.
So this morning I did a factory reset on the watch and then removed the device from the app using the Samsung A5
I then added the device again but this time using the mobile app rather than the windows 10 pc.
A couple of times the update failed but then I moved phone and device downstairs and closer to the router.
It may be coincidental but it seems the entire process is very and I mean VERY susceptible to Wi-fi fluctuations. Of course I could be wrong, but it did run through and so far everything on the wife's Ionic is comparable to my own.
Looking back.....
I setup my Ionic using the Windows 10 App in the lounge which is at the opposite end of the house to where the router is located.
Using same configuration on the wife's device in the bedroom which is above the lounge had problems.
It would also seem that once an update has failed you do have to take everything off (not your clothes) and try again.
Perhaps a little more error handling / resilience in the wifi connectivity tracking / fluctuation from the developers would help and reduce a lot of frustrated people out there.
I am pretty tech savy, .net development, networks etc but I must say the whole Fitbit experience has been challenging. Both the MS Band and Samsung Gear Fit were effortless to set-up. However, now we are up and running hopefully the Fitbit will prove a worthy replacement..

Glad you are sorted. Hoping the product evolves well and is a huge success.

Sorry peeps - I thought I had added to this comment but apparently not.
The crucial stage seemed to be removing the device from the wife's account and then adding the device again all through the mobile app worked and has been by and large ok since. Still a few non syncs but usually 2nd or 3rd attempt works.....
Not sure if this helps anyone or not.....

Moto Z-Force Droid Not Compatible with Ionic
Not happy. Had a Surge and it worked fine but once I switched devices and installed, uninstalled, reinstalled FitBit it still would not allow my Ionic to sync with my phone. I guess I am returning it for a Garmin Tracker. Ugh!!

Really feel your pain. We returned the problematic ionic and the replacement seems to be fine so far. Mine on the other hand still syncs fine but notifications have stopped!!
I look forward to hearing your experiences re the Garmin.

I am having enormous trouble connecting to my home wi-fi also. It shows up as full strength on my iphone7 but only shows up with one bar of strength on the fitbit app for my ionic. I've tried standing right beside the router (we have NBN) and no luck. I've uninstalled ionic, restarted it, turned bluetooth on & off, turned wi-fi on and off and nothing fixes it. I have emailed fitbit itself now as I am totally over the whole thing. I had a surge and no problems but upgrade because the band on my surge was bubbling and looking tacky after only 18 months. Makes me wonder whether I should be reconsidering staying loyal to fitbit and start looking at other trackers!

I was finally able to connect to my wifi and sync but ONLY once. After it will not sync with my Moto Z-Force Droid phone. I don't think any of the Fitbit upgrades on the software work. The Customer Support guided me in removing the Ionic, uninstalling and then re-installing again but after all that time it only worked once. The only way I can sync is with my PC--but I will not always have my PC with me. I sent CS one last email advising them that I would be returning it if they did not respond in an expedient manner with 100% certainty that the Ionic is compatible with my phone. Hope there is an updated software to make the Ionic compatible with my phone. HERE WAS MY EMAIL:
The very day I received the suggested tips, I responded that it was not resolved and I still don't have a resolution. Does anyone at FitBit even KNOW if the Ionic is compatible with the Moto Z-Force Droid phone. I have spent hours repeatedly uninstalling, reinstalling, removing the Ionic, etc. and it only would sync once with the phone. Then it couldn't connect with the bluetooth again. REALLY?? Please advise if you KNOW if there will be an update to the software to making syncing a possibility with the phone. Thanks.
