Won’t let me change colors

It won’t let me change colors on the watch face it stays the same as it was

Some watch faces allow that, some don't.  Which face are you using?

After you change the watch face and the settings in the watch face, you have to open an app on your Ionic and after you close it, the changes take effect (on some watch faces). Or you have to re sync your Ionic with the phone app.

Just found out that I had to disconnect it and re pair. It was simple
