I have all heart rate tracking turned off, but I am still seeing what appears to be a default resting heart rate of 65 bpm on the display screen. (I know the actual heart rate itself is definitely off because it just shows -- bpm).
Is there any way to completely hide the heart rate data on the display screen since I'm not using it? If so, where is that setting?

Hi, @Jessica_444 if you are talking about the main clock face on your Fitbit Luxe, you can certainly choose a clock face that does not include HR info. Instructions on how to change your clock face are here .
If you are talking about the “Today” screen on your Luxe, which you access by swiping up on the Luxe itself, there is no edit feature for this information on the Luxe itself. The edit feature is available only the Versa and the Sense.
I hope this helps. If I have misunderstood your question please post again. Welcome to the forums!
