I was losing weight fairly steadily until I started really paying attention to my steps and working harder to be far more physical than I used to be. Fortunately I am on a medication that as a side effect completely curbs my appetite - however entire days go by when I actually forget to or have to force myself to eat (never thought THAT would be a problem) I have noticed with the increased activity - my weight seems to plateau more often - anyone else experience this? Should I pay closer attention to my intake vs burn? I am no kind of fitness pro so this stuff is confusing! Any help here greatly appreciated!

Absolutely. Any time I've been eating too few calories, my weight loss eventually plateaus. I just experienced this recently. I was aiming for an average of 1600-1800 cals but due to my high activity and exercise regiment my weight got stuck for the last month. I recently upped my cals to 1900-2200 and immediately lost 1.5 lbs in the last few days.
If you're having trouble eating enough, it's quite easy to up your cals without feeling too full. Just increase your healthy fats; add some olive oil while cooking, an extra tablespoon of PB, some avocado or olives to a salad, a handful of nuts or seeds to your snack. Fat contains nearly 2x the amount of cals per gram as carbs and protein.
