I'm fairly new, but lost weight in my first two weeks of tracking calories and exercising. I weigh myself only once per week, every Friday morning. I have only exercised once this week due to being sick, kept to the eating and the - 750 deficit per day. I assumed that I would have gone down at least a little.
Has this happenend to anyone else? Am I potentially eating too little, or eating the wrong foods? There are times where I might eat later in the night because I have so many spare calories or I'm hungry and still in defecit.

Main reason people do not lose weight are fairly straight forward.
That is true if you are not losing weight over time. A week of no fluctuation could simply be water retnetion becuase you drank more and did not exercise. Water weight can shift the scale +/- 5 pounds for me in a day, so it is more than likely the case for you. Give it a few weeks after feeling better and getting back to workouts and see how it goes. If you still are not lossing weight, go through the steps above.

Probably eating too much and eating the wrong foods. It depends on the quality of the food. Bad foods are mostly breaded products and fast food joints. Good foods would be what a dietitian or personal trainer would recommend.
Many would recommend Foods for Building Lean Muscle Mass and avoiding the bad products. Like you can eat a Jimmy Dean Turkey Bacon Sandwich (a few products are in that. Egg, Meat, Low Calorie Bread). But if you're looking to exercise control, some dietitians like Jenny Craig have prepped meals with low sodium and all you have to do is put your credit cards away. Staying away from all the evil stuff like buying expensive coffee and buying a food product you shouldn't consume.

If you are definitely eating a deficit, then you WILL lose weight. I weigh everyday and this week alone have seen a spike of +3lb overnight, for no reason...the next day it was gone, as well as another lb. Try and concentrate on the overall trend rather than specific number because your weight will fluctuate day to day, hour to hour.
