I have been dieting for the last couple months and I find myself eating the same blah foods everyday. Although I have been very successful so far, I am afraid that if I add more to my diet I will not continue to lose weight. Any suggestions on how to make a low carb diet more interesting.

I don't eat low carb, but this is something a lot of dieters find. I'm not doing the best job of it but I'm trying to include at least one new recipe each week. I've kind of gone in between, making 3 new recipes one week (but freezing most of them for later so I'll have a variation over the next month).
So, go to one of the following and find something that appeals to you and try it.

My ideas without knowing what you are eating:
Change up your veggies
Use spices, it doesn't have to be bland, spice it up and that way you can vary taste a lot too (just try to go easy on the salt)
Change up your grains if you eat those: brown rice, quinoa, couscous
Use onions, garlic, ginger and/or chili peppers to flavour things
Basically, try to create variety in the food groups you eat from and create flavour.

I've found more variety since changing the way I eat.
I've adopted a pescetarian form of the Mediterranean diet and I've never been so excited to cook and eat.
I've gone from "meat and two veg" to a huge variety of fish and veggie meals.
Lentils are your friend!

I never seemed to tire of junk food, but healthy food I had to plan out. I can make the same bean and veggie soup taste several ways by using Indian spices, or Mexican spices, or Moroccan, or Italian herbs. Also, using seasonal fresh local veggies makes each week different. I started getting my veggies from a local farm co-op - all organic and picked no more than 24 hours before delivery. And they always include new recipes on their web page. If you watch a few cooking shows on PBS, or go to a book store and pick something that interests you, you'll expand your recipes in no time. I find I have much much more variety now than ever before. I just have to think and plan instead of grab what's easiest (junk)

@Bobbinyc- I signed up for a CSA (community supported agriculture) share this summer from a local organic farm. It's an attempt to make me cook with items I would normally not purchase. Basically you get a selection of whatever is in season for 20 weeks. They also do organic beef, pork and chicken. I did the same thing recently and purchased 2 mixed boxes (1 pork, 1 beef). There are the usual things you would expect, but again, it was to force me to cook more than just the usual thing.

Maybe part of the problem is the low-carb approach, because it excludes most of the foods many people consider delicious. Do you intend to stick to low-carb on a permanent basis, or just for the time of your diet, until you reach your target weight? How far away (in terms of lbs/time) are you from your weight goal? If it’s relatively close, I would bite the bullet and stick to what’s working, knowing that things would improve once you switch to maintenance. If it’s still quite far away, I would consider reintroducing some of the "missing" items. People often blame carbs for making them fat, while the fundamental cause is overeating. That carbs may contribute to a large part of that overeating is secondary. It’s possible to lose weight while eating a higher amount of carbs: it’s just a question of adjusting that amount to your activity level, so you’re able to have the caloric deficit needed for weight loss. Once you have some more carbs to play with, your diet will all of a sudden become more "interesting".
