Hi everyone!
During this period we have seen a lot of changes in our lives! And now with winter here, a lot of us aren't moving as much as we used to.
Eating healthy is a big part of staying at home longer, working from home, home schooling, etc.
I love Mediterranean Food and avocados. Mixing the avocado with some olive oil, or a big zucchini and eggplant salad with some couscous, is one of my favorite salads!
How easy this is to prepare is also a big win in my book.
Do you have any recipes , ingredients or kind of food that you love to have at home during these times?

My key to eating healthy is to plan out several days of meals, check my kitchen for ingredients and shop for what I need only. I do a lot of prep a few days a week. My breakfast is always the same so I make up 4 crustless mini quiches at a time, I vary the veggies and meat so I don't get sick of it. Lunch is always a big tossed green salad, I make a huge bowl twice a week ( no tomatoes, cukes, or soft veggies) piece of fruit and a fat free yogurt. Dinner is a large portion of green veggies and lean protein. Having a plan, doing the prep, knowing the meals a day in advance, works for me.

@BASILCHIVES , nice tip! I tried to plan my meals in advance as you do, but in my case I'm more a improvisation cook. When it's too cold to go outside, or I'm too lazy, I see what I have in the kitchen and prepare something right away! That's why I try to have olive oil at home all the time!
With my method there are things that I always need to have. But preparing or making a plan for meals, is in my opinion a good way for people more organized as me!
