Did you mean:

Leaving calories on the table.

Good idea or not? Counting up the allowed calories I did not eat last week I have over 2800 for the week that I did not use. Good or bad for my weight loss goal?

Bad, if you already set a weight loss goal, because your eating level already has a deficit to cause weight loss.

If you think bigger is better, than why not stop eating and just lose the weight fast and be done with it?

Whatever reasons pop to your mind, and likely several you aren't aware of, those same things will happen taking a deficit that is too big. It'll just take longer.

You'll also get the worst improvement from your exercise compared to a reasonable deficit.

And that's assuming you took a reasonable one.
