Can I input number calories I want to eat versus what it sets when I choose intensity. I don't want to eat 1100 calories. That is crazy. I did have it set at 1300 calories but now its changed.

Yes, from your Dashboard find the "Calories In vs Out" tile and hover your mouse over it, a gear icon will appear in the bottom left, click on that. Then click on the pencil next to your Plan level. Hit next (past the weight screen) then on the Food Plan screen click the link at the bottom "Set my own calorie target"

Thanks for info: have also adjusted daily calorie target figure.
But, with UK/EU food categories and calorific assessments being at variance to the US-based FitBit ones, how can I input my daily calorie data based on another program & database (Perfect Diet Tracker)?

Why do you think it's unrealistic?
You merely need to eat less than you burn.
By a reasonable amount is more sustainable now and in to maintenance than an extreme amount.
If you think bigger is better - why not just stop eating and get it over with quickly?
