Bluetooth Fitbit One does not work one the Samsung Galaxy S7 ( Nougat ).
Bluetooth version 7.0. The Fitbit does not accept it.
Probably the Fitbit can not turn on this OS software,or the Bluetooth 7.0.

According to the list of supported devices at www.fitbit.com/devices the S7 should work ok.

Welcome to the community!
I suspect that you're trying to pair your Fitbit One through the Bluetooth settings on your phone... Stop that. It'll just tell you that the pairing is rejected.
Setting up your new phone is easier than that. Install and log in to your Fitbit app. That's it. It'll establish the Bluetooth pairing with your phone. If you still have your old phone, you'll want to turn it off or at least turn off Bluetooth.
