Your One detects stairs by measuring changes in air pressure. If it detects a rise in elevation of 10 feet while you are moving then it will give a floor. It only gives floors for going up, not coming down.
Could it be that the flight of stairs you have been using is not quite 10 feet high?

My fitbit one does NOT count stairs correctly unless I wear it on my ankle. I found it to be more more accurate with step and stairs wearing it this way. I purchased a wrist wallet for my fitbit. The following one is good product to use:

I notice that my fitbit is not recording my stairs. It has always recorded them in the past. This just happened in the last two days. It has nothing to do with the 10 foot elevation. I have been climbing the exact same stairs as before and they did register in the past. This is a new problem. I climbed 6 flights today which I carefully counted and none were registered. I have alway worn my fitbit on exactly the same spot- left hip pocket. I consider this a serious problem because I know no matter how many steps I take I will not lose weight. It is only when I start taking extra stairs that I can drop some weight.

@cheinsohn there is a small hole on the back of the One which allows it to detect changes in air pressure which, in turn, lead to floors. If it has stopped tracking floors then you could check that this hole hasn't got blocked.

I don't know if this will work for you but it is worth a try.
I purchased a wrist sweet band with a zipper pocket from amazon (link below) and I wear the fit bit on my ankle. It better tracks steps and stairs this way.

Hi @Bgephart! So it is the issue with your One counting so many steps or stairs? If it is suddenly counting too many of any of them, I believe that you can fix that issue with the software by restart it.

A restart seems to have solved the issue for the moment, but I don't know what caused it in the first place. Interesting that it's not just mine...

@Boops and @Echo1 let me suggest you something else, try to set it up your tracker as a new device by following the instructions on @AlejandraFitbit post
@Bgephart maybe it was only a glitch on the software that caused this. But it is great to hear that it is working fine again.
