Hi @Sunflower2507. My hunch is that you have a manual log of some sort overlaying the actual step count that your Fitbit One recorded. I would suggest checking any manual entries made to your Activities Log, including any GPS-tracked activities and see if you can find the culprit.
Also, please use your Web brower to navigate to www.fitbit.com, sign-on to your account and see if the time and date stamp for your last successful sync (top left corner of your dashboard page, is current.

Syncing your tracker with another device, as you correctly stated, shouldn't result in skewing your step count. Please give us more specific as to which other device you used to sync that day you when you didn't have your phone with you. Note also that a GPS-tracked entry, using the phone GPS functionality, could also affect the step count.
One other possibility is your time zone. Please use your Web browser to navigate to www.fitbit.com, sign-on to your acocunt and click on the Log - Activities tabs. Are the missing steps logged on a different date by any chance? While on the Fitbit web page, click on the gear wheel icon at the top right, then Settings, and confirm that the time zone under the Time heading is correctly set.
