I used to be able to see my total badgs earned via my dashboard, but now I can't find that info (just my highest badge in each category).

Can someone help me?

You can do this via the web interface. Go to https://www.fitbit.com/badges/all and hover your mouse over a badge. It will show how many times you have got it and when the last time was.
