I am having a hard time understanding how I am supposed to track the time I'm on the elliptical. I have been recording the time (like when you go to sleep) and then I manually type "elliptical" in on the dashboard for that time. Is that all I do? Does the dashboard know how many claories are burned by me typing in the activity "elliptical"? I have searched all over the web and can't get any clearcut answers.

There are 2 type of activity logging. The first is the one you described where you start and stop the stopwatch at the beginning and end of the activity. All this does is highlight that period of time as an activity so that you can analyse the data easier. It does not change the data that your One tracked in any way so, in this case, it will not know you were on an elliptical and will get the calories wrong.
The other way is to use the app or dashboard to manually log an activity. Here you tell fitbit what you were doing using a list of predefined activities. It can then accurately calculate the calories for you. The following article explains how to do this but if you get stuck please do come back and we'll try to help.
