With the most recent update I am no longer able to edit goals (i.e., daily steps, floors, etc.).

Any suggestions on how I can do this now?

@Replicant_CA   I get that screen when I tap on my profile picture in the upper right.  Please tap on the You icon (with the four stylized squares) in the lower right, just below the green "+" button.

@Replicant_CA   Please tap on the You icon in the lower right of your app, then scroll down to Goals.  If you just want to change Activity goals, then tap on that tile.  It will take you to that section of your goals.  Less scrolling than if you tap on See all.
