I walk and cycle outside. These activities appear fine on the Fitbit. However, I also do spin classes and weights classes. How is it that every spin class has the exact same calories burned regardless of heart rate and the same happens with a weights class?

Are you manually logging the classes? If so, Fitbit guesses calories burn from the parameters you input. If you use the Exercise App to record it, or if it is auto-recognized, then you actual heart rate is used to calculate calorie burn.
Manually logging workouts is best just for times when you were not wearing the tracker.

One would think so, but manual logging does override the data that was actually recorded.
