I'm sorry to hear about the difficulties you experienced with your Fitbit Charge 3. Thank you for the information provided.
Our team has recently released a new version of the Fitbit app (3.53 iOS and 3.53 Android). For instructions on how to check your current version and update, please visit this article and open the menu "How do I update the Fitbit app?".
In addition, please make sure Power Saving Mode is turned off on your device. This mode frequently causes the device to disable Bluetooth.

I’m running the latest Fitbit app software and the unpairing issue continues. I have the IPhone 12 ProMac and running iOS 15.3. Any other suggestions. I have never had this issue before except in the last several months.
