I have been trying on numerous occasions to go through the steps of turning my phone off and on, turning Bluetooth off and on and turning my watch off and on and I am able to load the starting part of the update but it never completes in spite of living it on charger next to my phone for more than two hours. Maybe I’m too old for a charge three.

Please try the troubleshooting steps that are listed in this help article. This article may contain steps that you already tried but you can skip them and proceed with the rest. Finally, run the update again and see if it gets completed.
