I haven’t been able to sync my Fitbit for a whole week. I put it down to terrible signal as I was away. I am not home and it still wouldn’t sync. The device has now been removed from account and I cannot get it back on it, it just keeps loading. I assuming there’s issues everywhere!

Before considering other options, could you please confirm if you already tried all the steps listed here to resolve syncing problems?
Also, please make sure to check if the mobile device you're using is listed here as a compatible device to sync with the Fitbit app.
If the device is still not connecting, please set it up as a new device.

Mine won't sync properly either, but it does say that it synced.

Mine won’t set up. Keeps telling me to update or install app. It’s just a glorified watch if it won’t track.

Same thing happened to me. The Fitbit still works fine, but won't connect to the app after the last update. The fitbit keeps telling me to download or update the app (which I have MULTIPLE time on 3 different devices). It is frustrating that this feels like a money grab. Since this is an older device it was just made obsolete so that we are forced to buy a new one.
