Does the Fitbit start off with a set number of steps and calories every morning? I don't wear it when I sleep (charge it overnight), still every morning it shows a step count and calorie count (usually in the 300s) even before I put it on. Is there a way to reset it to zero every night?

Welcome to the forums!
Is the Fitbit near a vibration source like a fan, dehumidifier, or even a computer CPU? It can see the vibration as steps and add false steps.
The calories burned are BMR calories. Your fitbit also calculates calories burned for your BMR. You burn calories just by being alive! Even Sleeping. Fitbit includes these burned calories in it's calorie calculations, so even if you did not wear the fitbit, you'll still burn these calories.
