fat burned 100%
while>>
2 days before; i did workout for 111 minutes

calories burned : 542
fat burned 97%
another day:
I went for walk for 75 minutes

See How does my Fitbit device calculate calories burned?
For a person of given age, sex, height, weight, the biggest factor in calorie burn rate is intensity, as measure by heart rate.
Your 2nd workout with the lowest avg heart rate, you were burning 4.9 calories per minute.
The first workout with slightly higher heart rate, 5.3 calories per minute.
The third workout, with avg heart rate much higher, you burned 11 calories per minute.
As you can see, higher heart rate gives higher calorie burn per minute.
And, of course, the longer you exercise, the total calories increase.
The "fat burned" %, I expect you are actually looking at percent of time in fat-burning zone, which is just a certain range of heart rates.
