I have a new macbook with bluetooth and should not need to use the dongle, but the fitbit software insistes that I plug it in to sync (not counting the phone, that works fine).
Is there any method to get the software to skip past the dongle request and just use the native bluetooth? I should not have to use the dongle.

Welcome to the forums @joeschmoe77! Since you are connecting through a computer, you will need to install Fitbit Connect to sync with your Fitbit tracker. Your macbook's internal bluetooth will not sync to your tracker since Fitbit Connect can only sync to your tracker using a USB Wireless Dongle.
The only exception for a computer syncing without a dongle is the Fitbit App for Windows 10. Compatible mobile devices can sync seamlessly through the Fitbit App.
Hope this helps! Let me know if you have any questions

So make a fitbit app that uses the native Bluetooth in the iMac or MacBook. Your explanation says they wrote an app that works with Windows 10. So why not write one for OSX? No, your answer sure doesn't work for me.
