How do I change my charge 2 from my right to my left hand?

On phone app from Today screen, tap icon at top left corner to get to "Connected to Fitbit" screen, then tap your watch.  Scroll down a bit to see "Wrist Placement".

If what you really meant was how to get the display to flip, cannot be done.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
