Is there a way to erase the data on the app? I just activated tonight, and it is showing calories burned for multiple years already. Would like it to be accurate to me with today as a start date.

The short answer is "no"
As well as tracking calories burned through activity your fitbit also tracks your BMR calories. These are the calories you burn just keeping your body alive (even when asleep). They are calculated from your profile settings for age, height, weight etc so you needn't be wearing your fitbit to get them. If you look at a date in the past it will be able to calculate your total BMR calories for the 24 hour period. The data is not stored there, just calculated when you look at it, so there's nothing to be deleted.

Hi there @Kcurry81, welcome to the Community Forums.
As my friend @SteveH said, when you create a Fitbit account, the website uses your physical data (weight, height etc) to calculate your BMR calories.These are the minimum calories you'd need to burn every day to stay alive. It then populates your profile with this calorie burn back for six months or so to give you a sensible baseline against which to compare your future calorie burn once your tracker starts tracking your exercise and adding exercise calories to your BMR calories. The short answer is that what you're seeing is correct behavior and the calorie counts are individualized to you and there's no way to delete this data.
