I upgraded from a Fitbit Charge 2 to a Fitbit Charge 3. Since I have switched watches, I haven’t been able to see my mapped runs via the app.
Is there something I need to switch on or change within the app so that I can start seeing my finished map runs? What my new Fitbit Charge 3 shows after a run.
What my Fitbit Charge 3 shows when I swipe left
What my Fitbit Charge 2 would show after my runs

Welcome on board @N8TIVTXN, it's nice to see you around! Thanks for attaching those images to better explain what's happening with your exercises. Nice way to go!
Working with the GPS sensors in your phone, MobileRun calculates distance, elevation, and pace for your walk, run, or hike. When the activity is done and you sync your tracker, you'll find all the data and a GPS map of your route in your exercise history. I'd recommend to see How do I use the Fitbit app to capture GPS data?
Now, if the issue persists, please check the following article: Why isn't GPS working on my Fitbit device? for further instructions and troubleshooting steps.
In addition, I'd try the following steps:
I hope this can be helpful, if there's anything else we can do for you, please feel free to reply.

Recently my Fitbit charge 3 has been doing the same thing. I have gone through the troubleshooting suggestions listed above and it is still not mapping. Can you please provide a suggestive solution?

With all the suggested tips I received, nothing helped. So I sadly had to stop wearing it.
