So my BMR is around 1,700 and I typically burn between 500 and 700 calories at the gym (or so it says), so how come fitbit is saying i’m burning over 3,000 calories a day? Seems way off to me

It sounds like you are figuring when not at the gym, you are at your BMR.  That is far from true unless spend all your time away from gym lying down still in bed.  You are burning calories above your BMR just by sitting, even  more for standing, even more for any walking you do, even just going from room to room.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
